While some members of the class, me included, regularly go on “food trips” and/or “drink trips” after Saturday classes at AGSB, this food trip was different… it was a class requirement. Everybody was present including our professor.

Fist stop was Banana Leaf, a Thai restaurant. The ambience was ok. Although the restaurant had no doors to separate it from the mall, they managed to create a different feel once you stepped in. The staff was properly draped en-synced with the Thai feel. First reaction for some of us new to Banana Leaf was “Where are the plates?” Yes, they had no plates. True to its name, the plate they used was the “Banana Leaf” neatly lay down on our table. The waiters were very courteous enough and accommodated our number to be seated beside each other. That required about 6-7 tables moved with accompanying chairs. We didn’t get to choose our food, it was pre-selected by our class officers but looking at the menu, their prices were fairly lower than other Thai restaurants of the same caliber which I frequented. Their selection was pretty much the same as other Thai restaurants, I guess it would all boil down to the taste. The waiting took a decent 10-15 minutes, I guess it was ok with the volume of food we ordered. Soup was served first, “Malayan Seafood Laksa”, and it was lovely. Then the rice (which was perfectly cooked) came in with the main dishes, “Tilapia fillet”  (which was plated well) with different Thai dip sauces; “Phad Thai” (which authentically tasted good); “Stewed beef with Oyster Sauce”; and “Malayan Chicken Curry”(again tasted “Thai-ly” good). I may have missed out on some other dishes but rest assured they were all good. For the drinks, we got to choose our own, and I picked “Iced lemon grass with honey”, a very refreshing drink.

Second stop was Sugar House. Although I was already full as most of the class were too, a few sweet slices wouldn’t hurt that much. Ordered for us was “French Apple Pie”, which for me was not that good as the apples were still a bit hard which made it too chewy and heavy to eat plus it had grated cheese on top which was a bit odd for me; and the other cake was “Chocolate Truffle” which was heavenly for me, as it had the sweet taste of the chiffon filled cake with chocolate buttercream and the contrasting bitter taste of coffee! Perfect!

Last stop was supposed to be coffee, but since most of the coffee shops were full, we settled for our usual “drink trip” place… Draft. For a beer pub it was perfect! They have all kinds of beer from all around the world. While others had enough room for some beer, to my dismay, I had to settle for coffee. I ordered for a “Cappuccino” and it tasted great.

In conclusion, our first stop, Banana Leaf, was a great Thai restaurant. Given the quality of food they serve plus their very affordable prices they have, I’m definitely coming back for more. For our dessert place, Sugar House, the Chocolate Truffle will definitely be a sureadd-on to my list. And lastly, Draft, we still have two more semesters to go so me and my classmates would surely have a lot more Saturday afternoons in this place!

The food trip for me was a great activity, I had the chance to practice my OLO activities/senses again. And sharing it with great, lively and fun classmates and professor made it lovelier! Happy to be in entrep! Happy to be 10-B!

Three Great Guests at MBAH 10B Entrep Class Today

 Prof Jorge  and class in group picture with Mr. Joven Reyes, Dr. Eric Schulze, Rose Montenegro and Dr. Elsie Dimaano, Class President.

Three great guests came to the MBAH 10B entrepreneurship class today:   Ms. Rose Montenegro, CEO of Makati Medical Center,  Dr. Eric Schulze an expert in Teleradiology,  and Mr. Jose Paolo Molina Accounting Manager of Emperador Brandy.

Ms. Rose was most passionate and amazing in her presentation of the turn around of Makati Medical Center (when she is supposed to be retired). This she accomplished, despite being a non doctor, proving that your expertise can be applied in other field.  Rose came with her husband, Joven, the class valedictorian, summa cum laude of Ateneo College Class l972 (a classmate) a Harvard Graduate, and now COO CFO of SBMA.  (He is turning around SBMA)

Rose was most entrepreneurial in applying innovation to Makati Medical center - to processes, and simple things like lighting, furniture, mural on top of a roof, waiting area  -  things that count most to customers (having come from consumer goods and financial services companies.  She was responsible for phone banking at Citibank, which was a novelty for banking at that time it was launched)

Just by working on infrastructure and and processes she was able to ramp up revenues of  MMC;  the second phase of the restructuring, the soft issues is now underway.


 Rose and Prof Jorge Dra Elsie,  Dra Judz, Dra Thea, Dra Hope and Dra Miranda present token flowers, and certificate to the MMC CEO.


Dr. Eric Schulze of Telerad.Asia being presented Certificate of Appreciation and tokens by the sponsoring group:   Danae, Dr. Janice, Deo, and Roslyn


JP Molina, an Accounting Manager for Emperador Brandy was given a certificate of appreciation by the Class for explaining very slowly and clearly how to use the financial spreadsheet for FS projections for business plan and strama.

MBAH Case Analysis of Victoria Court

I like the case because of the laughter and the naughty discussions (experiential?) that sometimes ensues.  And sometimes reveal much about the students.

Much of the class though look very conservative.  One said she would not buy the thematic rooms/appreciate the repositioning efforts of the Kings.  The structure location, branding, brand equity of the motel are not consistent with the intent of the repositioning efforts.  One was frank enough to admit that she went with her husband to one while trying to make their first baby

This was the usual qualifier  of the statements of the MBAH students as the case analysis went on.  The case analysis today was led by Dr. A Villamayor and Fr. Bong Villamor.  The arrangement opened up the case analysis to more analysis.  However, those not sticking to the case facts had to qualify their statements with the quote of the day.

Deo, Drs Thea and Jeff made significant contribution to the case analysis. Deo and Thea noted that what the Kings actually executed was an innovation in the motel business, but not real repositioning or rebranding ie from motel to hotel.  It was about making more money and more value added for the establishment.

Dr. Afable said he participated in the the team who treated Angelo King in a hospital run by priests, the patriarch of the motel group mentioned in the case.  He said that the board and lodging operations of the hospital he head in Batangas.  I commented that I might see apartelle (an aka for motels too) named "Affables" in Batangas someday?

Plate group menu - group creative activity

Culinary Activity of MBAH 10B

MBAH H04

1. The Plate Group: Judith Cabanella, Victhea Girado- Pineda, Ma. Gina Nazareth, Hope Lapating, Loralie Evangeline Perez-Miranda
Sour recipe: Strawberry Pepper Salsa
This dish is perfect for entertaining during cocktails or as an appetizer, especially during summer. It combines the fresh sweet tartness of strawberries, combined with bell peppers. A healthy way to start a meal or share with family & friends during get-togethers.
 Ingredients:
½ cup Strawberries
¼ cup Red or Green Bell Peppers
¼ cup Olive oil
¼ cup diced Tomatoes
1 tablespoon Red Onions
½ tsp Balsamic vinegar
½ tsp fresh chopped Coriander
Salt & Pepper
Procedure:
1. Dice the strawberries, red pepper, tomatoes, onions into bits.
2. Mix all the ingredients in a bowl.
3. Add the Olive Oil.
4. Add half a teaspoon of balsamic vinegar and ½ tsp fresh coriander
5. Add salt and pepper to taste.
6. Serve with your favorite tortilla chips, melba toast or toasted french bread.


Sweet recipe: Strawberry Nut  Delight
A summer dessert using strawberries and sweetened nuts like panutsa from Batangas, or pili nuts. Easy to prepare- in 10 mins.!   Perfect with a cup of Barako Coffee or Expresso as you end your meal.
 Ingredients:
1 cup strawberries
½ cup sugar coated nuts (panutsa) – pili nuts may also be substituted
1 heaping tablespoon of nestle all- purpose cream
1 pc. cookie ( oatmeal or vanilla are acceptable) crumbled
 Optional: Grated  Dark chocolate
Procedure:
1. Slice the strawberries into bits.
2. Grind or pound the sugar coated nuts.
3. Mix all ingredients in a bowl including the cream.
4. Serve with toppings of the crumbled cookie
 Optional to sprinkle some  grated dark chocolate on top

 Triple Decker Strawberry Cream Cheese French Toast
            French Toast Pinoy style, creamier and sweeter for the Pinoy sweet tooth filled with 3 layers of delectable strawberry spreads "3 ways" namely strawberry cream cheese with strawberry bits, plain cream cheese topped with strawberry slices, and for the final layer, Filipino Strawberry Jam….. Delishioso!
 Pinoy Pepper Sausage Stuffed Peppers
            Tricolor of Fresh Bellpeppers sautéed with crunchy Filipino Popped Sausage Links (Longganizang Putok sa Sinangag), mixed and topped with Parmesan Cheese, stuffed into bellpeppers, then baked for a more nutty flavor… Yummy and fun!!!
 Totally Awesome experience!
 Triple Decker Strawberry French Toast
 Ingredients: What you need…..
1 can evaporated milk
4 eggs
3 tbs sugar
2 slices of American (or any old) bread
3 tsp of butter
 1 ½ tsp Strawberry creamcheese
1 ½ tsp Original Creamcheese
Fresh Strawberries (slices)
Fresh strawberries (minced)
Strawberry Preserves


 How to create it:
 1. For the French Toast:
a. Mix 1 can of evaporated milk, 4 eggs (beaten), 3 tbs of sugar.
b. Add a pinch of salt and pepper.
c. Place 1 tsp of butter on a pan.
d. Dip one side, then the other, of a slice of Bread into the milk mixture.
e. Place the dipped slice of bread on the pan when butter is melted.
f. Fry each side till golden brown.

2. For the cream cheese:
a. Slice a few strawberries into bits.
b. Mix with strawberry cream cheese.

3. To arrange:
a. Lay one French bread slice.
b. Spread a layer of strawberry cream cheese.
c. Top with a layer of original cream cheese.
d. Slice strawberries.
e. Layer on top of the cream cheese.
f. Add a layer of French Bread.
g. Top with strawberry jam.
h. Arrange on a serving plate.
 Serves up to six.


Pinoy Pepper  Sausage Stuffed Peppers
 Ingredients: What you need…..
15 links of Longaniza
1 whole garlic
1 whole onion
¼ tsp salt
¼ tsp pepper
2 cups rice
½ stick of butter or ¼ cup olive oil
1 yellow, 1 green, 1 red bell pepper
6 small red bell peppers
¼ cup parmesan cheese
 How to create it:
1. Cook rice.
1. Sautee' onions, garlic in butter.
2. Add 3 colors of diced bell peppers.
3. Add longganiza.
4. Add salt and pepper to taste.
5. Mix in the rice.
6. Add 1/8 cup of parmesan cheese.
7. Cut small red bell peppers in half.
 8. Fill bell pepper halves with the rice mixture.
9. Top with parmesan cheese.
10. Bake for 15 minutes.
Serves up to four. Enjoy!

 Tugtoners-Southerners Fusion Menu 
 Inspired by the sweet strawberries from the North and spicy red bell peppers from the South, the Tugtoners and jointly with the Southerners thought of a fusion of these elements and everything in between. The intricate yet elegant fusion menu flaunts the complementary creations of Payday Parfait, Sweetly Crostini, and the Definitely Divine Fruit Platter.      
 Our first dish, Sweetly Crostini, is made of thin wafer crostinis topped with fresh basil leaves, luscious diced red bell peppers infused in olive oil with salt and pepper, and drizzled with our very own sweet and tangy honey mustard dressing. This is a deliciously tarty treat made perfect with red wine.
 As for dessert, we have especially prepared the Payday Parfait - a creamy and smooth strawberry parfait. It's a luxurious sweet reward after putting in a hard day's work. Payday Parfait comes in a special parfait glass filled with a base of buttered graham granules and generously layered with cubed fresh strawberries and layers of fresh creme showered delicately with confectioner's sugar. Atop the lavish layers sit a finely selected cherry and a chocolate stick that complement every bit of bite.
 To complete the fusion, a creative side dish of fresh cherries and strawberries paired with a dollop of flavorful cream cheese in a vibrant red bell pepper carving was served. It was definitely a Divine Fruit Platter.
 And while the color Red abounds our dishes, it is also the color of passion. This, needless to say, is a perfectly creative menu to show your fiery and passionate love to your special someone this coming Valentine's day. So to you love birds, Bon appetit!

NAME OF DISH: 
HONEY-GLAZED FRUIT- & NUT- TOPPED CHOCOLATE CHIP COOKIE
SALES PITCH:
The group believes that the making of a good chef lies on his ability to create a dish from what is available. This is a sweet dish created from what was available to us.
The chocolate chip cookie we used in this dish was freshly baked and its sweetness was just right.    Definitely what a semi-sweet chocolate chip cookie should be. It was soft and chewy that once you nibble on it, you'll be asking for more! It tastes like heavenly chocolatey goodness.  Adding the nut makes it even more YUMMY!
The fresh strawberries and plump cherries added a different kind of sweet and tart flavors with a unique texture after each bite.  The drizzled honey stimulates the taste buds and with the combination of cookie, fruits, and nut; it just explodes inside the mouth.
The chocolate mint is the perfect ending for a sweet dessert.
So, come and try our dish! It's sweet yet healthy! Once you start savoring it, you'll definitely ask for more!

INGREDIENTS:
12 pieces medium-sized fresh strawberries
1 large red bell pepper, seeded
7 pieces Chocolate chip cookies
2 slices Pannetone bread               
7 pieces fresh cherries, halved
7 pieces cashew nuts
Organic honey
7 pieces mint chocolate
DIRECTIONS
  1. Clean a round glass plate where dish will be assembled. 
  2. Cut and stem a few strawberries into halves and place a piece on top of the chocolate chip cookie.  Set aside some leaves to use as décor in the dish.
  3. Cut cherries into half and place on top of the strawberry.
  4. Place one cashew nut beside the cherry.
  5. Drizzle the strawberry, cherry, and nut with organic honey. 
  6. Prepare seven of these.
  7. Arrange the fruit- and nut- topped cookies in a circular manner around the glass plate.
  8. Cut and seed the fresh red bell pepper into two decorative pieces preferably the top retaining the stalk and set aside.  This will serve as the centerpiece of the dish.
  9. Cut the pannetone bread lengthwise then place inside the bell pepper.  Cover with the other half of the bell pepper.
  10. Place 4 whole strawberries around the bell pepper.
  11. Place rectangular shaped mint chocolates in between the 7 cookies.
  12. Place strawberry leaves beside the mint chocolates for a more colorful dish. (Optional).
